Detailed and Delicious Chole Recipe

Chole, also known as chickpea curry, is a popular and delectable dish in Indian cuisine. It is not only nutritious but also a delight to the taste buds with its rich flavors and aroma. Here's a detailed recipe to make Chole.

Ingredients:​

  • Chickpeas (Chole): 250 grams (soaked overnight)
  • Onions: 2 medium-sized (finely chopped)
  • Garlic: 4-5 cloves (crushed)
  • Ginger: 1-1.5 inch piece (crushed)
  • Tomatoes: 2 large (finely chopped)
  • Green Chilies: 2 (finely chopped)
  • Oil: 3-4 tablespoons
  • Cumin Seeds: 1 teaspoon
  • Cinnamon Stick: a small piece
  • Bay Leaves: 2
  • Cloves: 2
  • Black Cardamom: 1
  • Green Cardamom: 2
  • Star Anise: 1
  • Coriander Powder: 2 teaspoons
  • Roasted Cumin Powder: 1 teaspoon
  • Red Chili Powder: 1 teaspoon
  • Turmeric Powder: 1/2 teaspoon
  • Garam Masala: 1 teaspoon
  • Chole Masala or Meat Masala: 1 tablespoon
  • Salt: to taste
  • Lemon Juice: 1 tablespoon
  • Fresh Coriander Leaves: for garnish
  • Water: as needed

Method:​

  • Boiling the Chickpeas:
    • Soak the chickpeas overnight in water.
    • In a pressure cooker, add the soaked chickpeas, one bay leaf, one black cardamom, and some salt.
    • Cook until the chickpeas are completely soft, usually for 7-8 whistles.
    • Preparing the Onions and Spices:
      • Heat oil in a pan.
      • Add cumin seeds and cinnamon stick, and let them sizzle.
      • Add finely chopped onions and sauté until they turn golden brown.
      • Add crushed garlic and ginger, and sauté well.
      • Once the onion, garlic, and ginger turn golden, grind them into a paste without adding water.
      • Frying the Spices:
        • In the same pan, heat a little more oil.
        • Add the remaining chopped onions and sauté.
        • When the onions turn golden brown, add chopped tomatoes and green chilies.
        • Add coriander powder, roasted cumin powder, red chili powder, turmeric powder, and garam masala.
        • Sauté the spices until the oil separates from the masala.
        • Mixing Chickpeas with Spices:
          • Add the boiled chickpeas to the masala paste and mix well.
          • Add water as needed to achieve the desired gravy consistency.
          • Add Chole Masala or Meat Masala and mix thoroughly.
          • After mixing the ingredients well, pressure cook the mixture for another 2-3 whistles to let the chickpeas absorb the flavors.
          • Once the pressure releases, check the consistency of the gravy. Add more water if needed and bring it to a boil.

          Cooking the Chole:

          Final Touch:

          • Add lemon juice and mix well.
          • Garnish with freshly chopped coriander leaves.
          • Serving:
          • Serve hot Chole garnished with onion rings, fresh coriander, and lemon wedges.
          • Pair it with roti, naan, bhature, or rice.

          Tips:

          • Soaking the chickpeas overnight is crucial for them to cook properly.
          • You can also use chopped tomatoes and green chilies for garnishing.
          • Adjust the red chili powder to your spice preference.
          • Slow cooking the Chole enhances the flavor of the spices.
